Day 501 - NEW AND YUMMY RECIPE SHARE!!

Happy Monday everyone!  I hope you all had an amazing weekend! I know I did.  I got to hang out with both of my sister and their sons.  We walked at the park, shopped, ate, and just spent time together.  It was so nice.  Saturday, I decided to make lasagna for dinner. I made a regular lasagna for the guys, but crated a white chicken lasagna for us ladies! I used bits and pieces of different recipes to come up with this Weight Watcher friendly version. It was very good. So here is the recipe:

Makes 12 servings
9 points+ per serving

Ingredients:
1 lb boneless, skinless chicken breasts
4 cups baby spinach chopped
2 tsp olive oil
1 tbsp minced garlic
1 cup artichoke hearts (packed in water), chopped
2 cups 2% mozzarella cheese
1/2 cup Parmesan cheese
15 oz part-skim ricotta cheese
2 eggs
1 tsp basil
9 whole wheat lasagna noodles
4 cups light Alfredo sauce

Directions:
1.  Cook chicken and shred,
2.  Heat up olive oil.  Saute spinach and garlic until wilted.
3.  Boil lasagna noodles according to instructions.
4.  In a large bowl combine 1 cup mozzarella, 1/4 cup Parmesan, ricotta, eggs, artichoke hearts and basil until well mixed.  Stir in the spinach and garlic mixture.
5.  Spray a 9x13 baking dish with non-stick cooking spray.
6.  Pour Alfredo sauce into dish to cover bottom, sprinkle on about 1/3 of the chicken.  Top with lasagna noodles.  Top with 1/3 spinach cheese mixture.  
7. Repeat layering two more times. topping it off with remaining sauce, 1 cup mozzarella, 1/4 cup Parmesan.
8.  Cover with a double layer of foil.
9.  Bake at 425 for 1 hour.  Let sit 15 minutes before cutting.
10. Enjoy!

2 tbsp peanut butter - 5 points+

Luna chocolate cherry bar - 5 points+
Yoplait light strawberry yogurt - 2 points+

Used 41 out of 46 points!
