What I Ate Wednesday

My lunchtime salad bar obsession continued this week!  YUM!

Saturday evening, we went to Red Lobster for dinner.  I had a side salad with no croutons and red wine vinaigrette, 1 cheddar bay biscuit, blackened tilapia (which I could only eat half of) with pineapple salsa, broccoli, and green beans.  It was DELICIOUS!

Sunday, I made a batch of my favorite oatmeal muffins (click here for the recipe)!  They disappear so quickly around here.  I am playing with a recipe to make some pumpkin ones this next week, so if it turns out I will be sharing!
I also made a DELICIOUS pumpkin spice latte!  And unlike some, it actually has REAL pumpkin in it!  I added a little whipped cream to the top of mine with a sprinkling of cinnamon (make sure if you do this you account for the extra calories or points)



Pumpkin Spice Latte
Makes 2 Servings

8 oz cup of coffee
2/3 cup unsweetened vanilla almond milk (you can sub here if desired)
1/4 cup pumpkin (make sure it is pure pumpkin and not pie filling)
2 tbsp stevia
1/8 tsp pumpkin pie spice

Combine all ingredients in a small saucepan until boiling.  Whisk together until smooth!  Top with whip cream if desired and ENJOY!

Per Serving: 22 calories, Fat: 1g, Carbs: 4g, Protein: 1g, Fiber: 1g
WW: 1 point+

Sunday night I was craving ice cream, so I made my own by blending together 1 cup frozen strawberries, 1 cup unsweetened vanilla almond milk, and a container of Chobani 100 calorie strawberry Greek yogurt.  It made 2 HUGE servings and tamed my craving for only 100 calories, or 2 PP.

Tuesday, I had no idea what to have for lunch and then I remembered I still had my other piece of tilapia from Red Lobster.  So I had brown rice, black beans, steamed broccoli, and my tilapia all mixed in a bowl.  It tasted SO good and was very filling!

Simply What I Ate Sunday

We are iced in today so I am relaxing and catching up on laundry.  I did get a workout in and made a big pot of chili!!  Hope you all have an amazing Sunday!

Special K protein cereal - this was REALLY good and kept me full until lunch! 3/4 cup=3 points+
Stonyfield Greek caramel yogurt. This was 4 points+ and I was a little worried about using that many points, but this was so good! I think it would be good to dip apple slices in!

4 oz lean ground beef browned in chili pepper olive oil - 6 points+

1/3 cup Weight Watchers Mexican blend cheese - 2 points+
salsa - 0 points+
1/3 cup fat free Greek yogurt - 1 point+

Today I used 43 out of 45 points!

So Much to Share Saturday - Goals and "New to Me" Food Finds

A new month is upon us and hopefully some warmer weather (after the snow/ice storm we are supposed to get tonight).  

Here were my goals for February:

NO EXCUSES - I really want to work on not making excuses for why I don't stay on plan. - I feel like I did a fairly good job with this one!
LOVE ME - I am working on this, but I have struggled the last few weeks with some negative self talk. For February I really want to work on loving myself and feeling good enough for me. - I had a couple days where I felt negative, but I wrote about it and overcame it!
WEIGHT LOSS - I am not going to set a number, but I REALLY want to get under 300 pounds this month!! - DID IT!!!!!!!!!!!!!!!!!!!!!!!!!


1 oz of these is 5 points+.  They were SO yummy and really satisfied the sweet craving!
I had a coupon for this so I thought I would give it a try. 2 tbsp=6 points+.  It was good but not something I would eat often unless I had extra points to use.
Fiber One has cookies out.  I tried the double chocolate one.  3 points+ and SO yummy!  They also have chocolate chip and oatmeal raisin!
There are 2 of these flatbread pizzas in each box.  1 flatbread is 5 points+.  This was tasty and easy for a quick lunch and I get 2 servings for the price of one.  AND, if you eat Lean Cuisine make sure you sign up for their Delicious Rewards program.  You earn points by entering the code on each box and they have some fantastic things you can get with your points.  Click here to go to their site.


I joined a new challenge for March.  The challenge is to get some kind of activity EVERY day of the month!  I am excited for the motivation this will give me.  If you are interested in joining, click here for info.
